Fuqi Feipian
제1차 선정Fuqi Feipian is said to have begun in the 1930s when the couple Guo Chaohua and Zhang Tianzheng peddled cold-dressed beef offal from shoulder poles in Chengdu's old Shaocheng quarter. Their careful ingredients and original mala dressing, and their working as husband and wife, led diners to call the dish "the couple's offal slices," a name it still bears.
A representative Chengdu cold dish recognized as a China Time-Honored Brand in 1995, it is famous for large, thin slices in a rich numbing-and-spicy dressing that melt in the mouth, a banner of Sichuan's cold appetizers.
Beef head skin, heart, tongue, tripe, and meat are braised and sliced, the "lung" of the name really various offal, then dressed with chili oil, ground Sichuan pepper, sesame, crisp peanuts, and braising liquor, numbing and aromatic with broad, full-flavored slices, a hallmark of Sichuan's cold-plate craft.
As a China Time-Honored Brand, Fuqi Feipian carries on Chengdu's craft of numbing, spicy cold-dressed beef offal and is a defining house for tasting the mala flavor of Sichuan cold dishes.
