Juànzi Chicken (Chicken Simmered with Dough Rolls)

Juànzi chicken, also called chicken cushioned with rolls, is the most heartfelt of Zhangye home dishes. Free-range local chicken is cut up and simmered until tender, then thin dough rolled into little flower-shaped rolls is laid over the pieces and steamed together under a tight lid so the rolls drink in the essence of the broth. Served, the chicken falls off the bone and the rolls are soft and fragrant in a thick, deep sauce.

Origine

The dish grows from the Zhangye farmhouse, a Northwest wisdom of one-pot cooking that joins staple and dish: at busy times the main food and the meat are cooked together to save fuel and time while their flavours merge. A mutton-and-roll variant exists too, proof of how deep its roots run in Hexi cooking, and Zhangye people count it among the homely tastes they cannot bear to lose.

Brought to the table in its pot, chicken and rolls are eaten together—first the tender pieces, then the broth-soaked rolls—needing no other staple, one pot a full meal, especially loved as winter nourishment.
