Pork Chop Bun

Spécialités gourmandes
Présentation

The pork chop bun sandwiches a marinated, freshly fried thick pork chop inside a crisp-on-the-outside, soft-on-the-inside baked bun; the chop is seared outside and tender within, locking in its juices, while the bread soaks up the fat to a savoury crunch, a signature of Macau cha chaan tengs and street stalls.

Origine

The pork chop bun is a child of Hong Kong-Macau cha chaan teng culture, made famous in Macau by old shops around Rua do Cunha on Taipa (such as Tai Lei Loi Kei), where charcoal-toasted buns and iron-pan-fried chops became a byword for hearty Macau fare.

Comment le déguster

Made to order and eaten hot, the first bite bursts with crusty bread and juicy pork; it is usually paired with an iced milk tea or iced lemon tea to cut the richness, a filling lunch or teatime treat.

Caractéristique

The contrast of charcoal-toasted crusty bun and iron-pan-fried thick chop, the gushing juices and the no-nonsense heft are the marks of the Macau pork chop bun.
