Emeishan Snow Konjac

Emeishan snow konjac is made by freezing local konjac cake at low temperature, then slowly thawing and drying it, creating a honeycomb-like porous structure that is light and absorbent of broth and seasonings.

Origine

Konjac has been cultivated in the Emeishan foothills for centuries. The Buddhist vegetarian tradition of the mountain's temples encouraged the development of konjac processing techniques, and snow konjac became one of the most distinctive local agricultural products.

Comment le déguster

Most commonly braised with meat slices and doubanjiang, or cooked in hotpot, where the porous structure absorbs the broth, giving it a springy, richly flavoured bite.

Caractéristique

The honeycomb structure created by the freeze-thaw process is snow konjac's defining feature, giving it far superior flavour absorption compared with ordinary konjac — a product of Emeishan's unique geography and food culture.
