Jindalai Restaurant grew out of the First Ethnic Restaurant of Yanji, founded in the 1950s and now some seventy years old, restructured twice in 1989 and 1998 to become a leading Korean-ethnic restaurant in Yanji. Its cold noodles were named a "China Famous Snack" in 1997.

Jindalai is among the most representative inheritors of Yanji Korean cold noodles, has shown its noodles and kimchi at the China International Import Expo, and has been profiled by major media, a flagship name for visitors seeking the taste of Yanji.

Savoir-faire emblématique

Its cold noodles use buckwheat as the base, prized for the springy chew of the strands and the sweet-sour chill of the broth, garnished with beef slices, kimchi, egg and pear; the traditional recipe and hand method have been kept for over seventy years, and sixth-generation inheritor Gao Fenglie still holds to "the unchanged traditional taste."

Statut culturel

Jindalai is a Chinese time-honoured brand, recognised as a "Jilin Time-Honoured Brand" in 2014, and its cold-noodle making craft entered the Jilin provincial intangible heritage list in 2007.
