Shao Wansheng was founded in 1852, originally named Shao Wanxing and opened by a Ningbo merchant before moving to Nanjing Road, becoming a famous Shanghai purveyor of wine-cured southern provisions.

Ce qui a fait sa renommée

Its wine-cured fare—wine-marinated chicken, drunken crab and snails, and assorted cured provisions—has long graced old Shanghai's festive tables as classic accompaniments to drink.

Savoir-faire emblématique

Shao Wansheng carries on the Ningbo-style curing craft, slowly steeping ingredients in lees brine and yellow wine for a savoury flavour laced with the fragrance of wine—a signature skill of Shanghai's southern-goods trade.
