Jimo Old Wine

Jimo Old Wine comes from the Jimo area of Qingdao and is one of northern China's representative yellow wines (huangjiu), with a long brewing heritage that makes it a classic example of millet-based northern yellow wine.

Deep brown in colour with a rich, faintly bitter taste that finishes sweet and a roasted aroma, it stands apart among northern yellow wines and has long been known as a famous local wine of Shandong.

Made chiefly from millet, it follows a traditional process that includes caramelising the grain, fermenting with starter cultures and ageing; its roasted, mellow character comes from the special way the raw grain is treated.

Jimo Old Wine is a well-known traditional yellow-wine brand of Shandong, carrying the brewing culture of the Jimo area, and its brewing skill is protected as intangible cultural heritage.
