Fondation
Jianxinyuan traces its roots to 1906, when it opened as the Yunnan-flavor eatery 'Sanhechun'. After a 1956 ownership merger it took its present name, becoming an emblem of old Kunming's rice-noodle culture.
Ce qui a fait sa renommée
The shop built its name on crossing-the-bridge rice noodles, drawing generations of Kunming diners, and was named among China's first batch of 'Time-Honored Brands' in 2006.
Savoir-faire emblématique
Its hallmark is a long-simmered broth, springy rice noodles, and a tableside ritual in which diners slide raw meat and fresh vegetables into the scalding soup to cook them on the spot.
Statut culturel
Still operating today, it remains one of the key bearers of Kunming's crossing-the-bridge noodle tradition.
