Laolongkou Baijiu Distilling Technique

PCI national · 2ᵉ liste
Origine

The Laolongkou distilling craft traces to the Yilongquan distillery of 1662 in old Shengjing and has continued unbroken for over three centuries, a living heritage of Guandong baijiu.

La forme artistique

The craft unfolds across fifteen steps with six hallmarks—pure water and fine grain, festival-time starter-pressing, old-cellar fermentation, retort-vat distillation, 'liquor-sea' aging and careful blending—relying on the old well and the cellar cluster known as the First Cellar of Guandong.

Importance culturelle

Inscribed in 2008 on the second national intangible heritage list, the technique is anchored by the largest and best-preserved continuously fired aging cellars in the northeast.
