Wengong Dish mixes minced pork with taro or sweet-potato starch, shaped into oval dumplings layered with egg, shiitake and bamboo shoot in a bowl, steamed and inverted to serve, soft and tender with a rich, savoury broth.

Origen

The dish is said to have been created by the Southern Song philosopher Zhu Xi while he taught at Mount Wuyi; after his death he was given the posthumous title "Wengong," which gave the dish its name. Rich in cultural meaning, it has long been a centrepiece of Wuyishan cuisine for honoured guests and scholar's celebrations.

Served in its bowl or inverted onto a plate and eaten warm, the dumplings are springy and the broth mellow; it appears on banquet menus across Wuyishan restaurants, often paired with rock tea or local bamboo dishes.
