Highland-Barley Wine (Qingke Jiu)

The wine grows from the plateau's farming and brewing tradition, where barley is the one grain that reliably yields on the highland; Tibetan households have brewed it for generations to honour kin and friends, and no festival, wedding or arrival of guests is complete without it, making it a cornerstone of Tibetan custom.
Before drinking it is gently warmed in a pot over hot water and poured into small bowls to offer guests; Tibetan hosts often accompany the toasting with drinking songs, and at festivals or for visitors the host first presents three bowls to show sincerity before the singing and drinking carry on into the night.
