Yangyuxing

Yangyuxing was founded by Yang Xintian around 1894 in the late Qing dynasty, beginning as a small noodle shop whose carefully made hand-rolled egg noodles won it a place in Changsha before it grew into a brand known across the province.

A Changsha saying pairs "Yangyuxing's noodles, Xu Changxing's duck, Deyuan's buns"; its soup noodles are celebrated for springy strands, clear savoury broth and generous toppings, a homely taste woven into local memory.

The dough is made with fresh egg, repeatedly rolled and pressed, then cut into silk-fine strands; toppings range from braised sauces to shredded pork and egg yolk, with broth slowly drawn for depth, showing the refinement of Changsha noodle craft.
