Shenzhen Yunpian-Cake Craft

PCI provincial
Origen

The Shenzhen yunpian-cake craft is carried on by Hechenghao, founded in 1901, and is said to have been created by Huang Guo of Futian in the old Shenzhen market town, a local continuation of Lingnan's traditional snack-making.

La forma artística

The craft roasts glutinous rice with river sand for fragrance, ages it to mellow the heat, then grinds it, sweetens and presses it, and finally slices it into leaves as thin as paper that peel apart one by one, a careful, wholly hand-judged process.

Importancia cultural

In 2015 the craft was listed in the fifth batch of Guangdong's provincial intangible heritage, one of the few food-related heritage items in Shenzhen tied directly to a homegrown century-old brand.

Dónde experimentarlo

The craft is kept alive by Hechenghao in the Bao'an area of Shenzhen.
