Spanish mackerel dumplings are dumplings filled with boned, finely chopped mackerel, seasoned and wrapped in dough; the filling is tender and juicy, making them a coastal Qingdao speciality.

Herkunft

Set on the coast, Qingdao has long had ready access to mackerel as a seasonal sea fish, and filling dumplings with it is a traditional way coastal Jiaodong households make use of the catch, gradually tied to local custom.

Qingdao has a spring custom of giving mackerel to respected elders, in which sons-in-law or younger family members present the fish—or dumplings made from it—as a gesture of filial respect; the dumplings are usually boiled and eaten hot, often dipped in vinegar.

Besonderheit

The mackerel filling is smooth, free of fishiness and intensely savoury, releasing juice when bitten—quite unlike meat dumplings inland—and embodies both Qingdao's seafood dumpling tradition and its custom of honouring elders.
