Yanjiang Hainan Chicken Restaurant
2. ListeYanjiang Hainan Chicken Restaurant was founded in 1936 by Wu Yukui of Wenchang, first named Yukui Chicken Restaurant in Wenchang town; his family had been selling Wenchang chicken since the Qing dynasty, making them pioneers of the trade. Later keepers brought the brand to the provincial capital Haikou, and it grew from a single shop into more than ten branches reaching beyond the province.
In 2011 Yanjiang Hainan Chicken Restaurant was recognised by the Ministry of Commerce as a China Time-Honoured Brand, the first restaurant in Hainan to win the title, and it remains one of Haikou's most celebrated old Wenchang-chicken houses.
Its Wenchang chicken follows the family's age-old methods of rearing and cooking, the birds fed on rice bran, peanut cake and sweet potato for about a hundred days, then cooked for thin crisp skin, tender fragrant flesh, served alongside Hainan dishes such as dregs vinegar and Dongshan goat, keeping the craft alive in practice.
Yanjiang is a China Time-Honoured Brand (second batch) and a representative bearer of the Hainan provincial ICH item of Wenchang-chicken rearing and cooking.
